Truffle Mac and Cheese
Truffles are very famous and very important in the world of food.
If you’ve never had truffles before, it’s hard to describe their taste: they are succulent, earthy, like an explosion of flavor in your mouth, 120 aromas all together. They taste great shaved on a pasta dish.
If you don’t have truffles on hand at the moment, don’t worry, you can cook this dish even using an amazing white truffle and porcini sauce. Let’s see how to do it!

Preparing truffle mac and cheese
Preheat the oven to 370° F and butter a 13x9x2 in baking pan.
Boil a large pot of water. Season with salt and add the macaroni pasta. Cook the pasta for about 4-5 minutes until al dente. Drain and set aside.
Heat the milk in a small saucepan. Melt the butter in a medium sized saucepan and then add the flour all at once, stirring continuously for one minute.
Continuing to stir, slowly add the hot milk to the butter and flour mixture. Continue stirring for about 2-3 minutes until the sauce begins to set. Incorporate the grated cheddar and fontina into the pot and stir until it melts; now add the grated Parmigiano Reggiano cheese and continue to stir until all the ingredients are melted and well combined.
Add a jar of White Truffle & Porcini sauce. Season with salt and pepper to taste.
Now add the previously set aside pasta and parsley to the sauce and stir well until all the ingredients are incorporated.
Transfer the pasta to the buttered baking pan, sprinkle with breadcrumbs and grated Parmigiano Reggiano cheese, put it in the preheated oven and cook for about 30-35 minutes, until golden brown.
